Canned Pickled Beets

Canning Pickled Beets

By Derek On August 6, 2012 · Add Comment
Full disclosure: this is my first attempt at preserving beets. I will update this recipe in a few weeks with the results, but rest assured, I researched this one through and through. We've been getting a lot of beets lately from our CSA. Last year, I hit upon a recipe for a chocolate beet cake, and my wife perfected it. This year, I wanted to expand my horizons.

Classic Arnold Palmer

By Derek On August 5, 2012 · Add Comment
There was some confusion tonight with a friend as we discussed mixed drinks.  He thought an Arnold Palmer consisted of 1/3 lemonade, 1/3 iced tea and 1/3 vodka (which would be incredibly strong), explaining that he never ordered them at the restaurant because he didn’t want to get drunk.  I politely explained that he was [...]

Homemade Guacamole

By Derek On August 5, 2012 · Add Comment
As much as I like McCormick as a company, this does not make guacamole.  Yes, it is simple and convenient.  But it doesn’t taste like the real thing.  That’s not McCormick’s fault; that’s saying that guacamole is best made fresh. As I’ve mentioned before, I’m training for the upcoming Tough Mudder Wisconsin.  For our team [...]

Borrowed Friday – Eggs in Chili Clouds

Basil Storage

Unique Frozen Herb Storage

By Derek On August 2, 2012 · Add Comment
When we received our bags from our CSA the other day, one of the surprises was another huge bunch of basil. This is not a bad thing. I love to cook with basil. However, I am growing basil in my own herb garden, so I suddenly have an abundance of this herb. I read several years ago that one of the ways to store fresh herbs is to chop up leaves and put them into ice cube trays, then fill with water and freeze. Then, whenever you need some, you pop one out and put it into your dish. Borrowing that idea, I got out some of these containers and began chopping up the basil.

Shrimp Pesto Pasta

By Derek On August 1, 2012 · Add Comment
A while back I featured a recipe for Spinach Pesto. Spinach, as you may well know, has specific properties that, when ingested from a can through a corn cob pipe, allow you to bulge your muscles, squint, and say "Agh gugh gugh gugh gugh" Spinach is also my favorite leafy vegetable. I LOVE spinach. I also love pasta, shrimp and lamp. So here's a recipe to use all those things that I love (minus lamp).

Homemade Vanilla Ice Cream

Easy Homemade Vanilla Ice Cream

By Derek On July 31, 2012 · Add Comment
As a treat for my wife, I made her some homemade ice cream tonight. Well, it's not exactly ice cream, per the standard definition. But it is delicious. And super easy. However, this is a diet breaker! Do NOT expect this to be low-calorie. Do NOT expect it to be easy to put down, either!
